HOW TO SHARPEN YOUR KNIVES?
1.Soak both sharpening stones in water for about 5-10 minutes and remove them as soon as bubbles stop rising.
2.Select the correct grit side: For a dull knife, use the coarse side first (#400). For normal wear, the medium side (#1000) will suffice.
3.Attach the angle guide: Apply some dishwashing liquid or water to the blade before attaching the angle guide to prevent scratches. Hold the back of the blade over the stone at about a 20 degree angle.
4.Drag the blade across the stone ten times on one side and turn the knife over to repeat the same on the other side. Keep the stone wet and alternate sides, making ten pulls on each side until you can feel a burr on both sides of the knife. This process will take about 20 minutes.
5.Refine the edge: use the 3000 grit side for fine grinding at 10~30 degree angle and work gently for 15 minutes.
6.Refine the edge: Use the side with a grit of 8000 for mirror polishing for 10 minutes.
7.Use a leather sharpener to polish the blade and remove the burr.
8.Use the white 320 grit honing stone setter to efficiently remove clogs, dirt and worn layers from the whetstones.
9.Rinse the grinding stones and allow them to dry completely before storing them.
